Soup To Nourish Your Body

If you are looking for wholesome, nourishing food that will feed your body this winter, soups are a real winner.

Yes, you can buy tinned and fresh ones at the supermarket, but there is something really satisfying about serving up a steaming bowl of goodness you have made from scratch.

Asian Broth
If you are looking for a light lunch option, you can’t go wrong with this quick and easy recipe that serves four.

You will need:
3 cloves of garlic
One piece of ginger (around 5cm)
200 g of pak choi, choy sum and Chinese cabbage
2 spring onions
1 red chilli
2 star anise
800 ml of clear vegetable stock
1 lime
Soy sauce

To make:
Peel and crush the garlic, then peel and grate the ginger. Trim the greens and finely slice the spring onions and chilli then add to a saucepan together with the garlic, ginger and star anise.
Put the pan over a low heat, add the stock, then bring to the boil. Gently simmer for around half an hour, then finally add the vegetables and cook gently until they are slightly wilted but still give a little bit of crunch.
Serve with soy sauce and a little lime juice and enjoy the fragrant flavours.

Winter Vegetable Soup with Red Lentils
This is a great warming soup to enjoy with family and friends after a country walk but also makes a hearty dinner when served with pitta bread and humus.

You will need:

85g of dried red lentils
2 medium carrots, diced
2 leeks, thinly sliced
1 red pepper, deseeded and diced
2 tablespoons of tomato purée
1 tablespoon of fresh thyme leaves
3 cloves of garlic peeled and crushed
1 tablespoon of vegetable bouillon powder
1 teaspoon of ground coriander
Boiling water
Salt and pepper to taste

To make:
Add the lentils and vegetables to a pan together with the tomato purée, thyme, garlic, bouillon powder and coriander, then pour in one litre of boiling water and stir well. Cover the pan and simmer for 30 minutes or until the lentils are tender.
You can either eat this as a chunky soup, or blitz in a blender and enjoy a smoother meal.

Roast Sweet Potato Soup

This delicious soup is a packed with 2 of your 5 a day and is perfect for taking to work in a flask or eating after a gym session.

You will need:
500g of sweet potato, peeled and cut into small chunks
300g of carrots, peeled and diced
Olive oil
2 small red onions, peeled and finely chopped
2 garlic cloves, peeled and grated
1 tablespoon of vegetable bouillon powder
100ml of fat-free crème fraîche, plus extra to serve
Salt and pepper
Boiling water

To make:
Heat oven to 220C/200C fan/ gas 7 then drizzle the carrots and sweet potatoes with olive oil plus salt and pepper and cook for around half an hour.
Heat two large tablespoons of olive oil in a saucepan and fry the onion until it is soft and translucent. Add the garlic and cook for several minutes then pour in the boiling water and vegetable bouillon powder and mix well and simmer for around ten minutes.
Take the roasted vegetables out of the oven and once cool, add to the pan mix and blend together until smooth and lump free.
Add the crème fraîche, reheat and enjoy.

With Easter just around the corner and the long bank holiday ahead of us, you just know people will be popping by for a cuppa and catch up.

Rather than being caught on the hop (see what we did there) and having to dig out a packet of dodgy digestives, what not make some Easter goodies at home and you will be ready for anything?

Easter isn’t Easter without hot cross buns and they taste better than ever if you make your own.

To make eight tasty treats, add the following ingredients to your shopping basket:

  • 500g strong white
bread flour
  • 1⁄2 teaspoon of salt
  • 2 heaped teaspoons of mixed spice
  • 50g caster sugar
  • 50g salted butter
  • 200ml full fat milk
  • 200g mixed dried fruit
  • 2 medium free range eggs
  • 7g sachet easy-blend dried yeast
  • Honey

To make the buns, first pre-heat your oven to 220C/fan 200C/gas.

Sift the flour into a bowl and stir in the mixed spice, salt and sugar then rub in the butter with your fingertips. Add the dried fruit, then sprinkle over the yeast and stir in. Gently warm the milk then beat with the eggs and pour in the dried ingredients. Using a blunt knife, mix the ingredients to a moist dough, then leave to settled for 20 minutes.

Cut the dough into eight equal pieces and shaped these into buns. Space apart on a baking sheet, cover loosely with cling film and leave in a warm place until for around 45 minutes until they are half the size again. Mix a little flour with two tablespoons of water to make a paste, pour into a plastic food bag and make a tiny hole in one of the corners. Pipe crosses on top of each bun, put them in the oven and cook for 15 minutes until risen and golden. Trim the excess cross mixture from the buns, then brush with the honey and enjoy warm with butter and jam.

A plate of beautiful biscuits will impress your guests. This recipe is super easy to make and you can be as creative as you like with the decorations. For one batch, you will need:

  • 125g butter, softened
  • 125g caster sugar, plus 1 tbsp. extra
  • One free range egg, beaten
  • 1 tsp vanilla extract
  • 250g plain flour
  • Icing sugar
  • Bottles of food colouring
  • Sprinkles and mini eggs

To get things started, pre-heat the oven to gas 5, 190°C, fan 170°C and line a baking tray with non-stick baking paper.

Cream together the butter and sugar together until light and fluffy then add the egg and vanilla extract. Gradually fold in the flour then create a ball of dough and wrapped this in cling film and chill in the fridge for an hour.

Take the dough out and roll out to the thickness of a £2 coin, then cut the dough into oval shapes; if you can find bunny or oval cutters, these are perfect.

Chill for another 30 minutes before baking for 15 minutes and then leave to cool on a rack.

Make up the icing according to pack instructions and add food colouring to make your designs really stand out. Ice, add sprinkles and mini eggs then leave to dry before eating with a cup of tea!

Now all that is left to do is hide those eggs and let the Easter fun begin.

As summer comes to an end and autumn begins, many of us are switching from burgers on the grill to jacket potatoes in the oven.

With a wide variety of gorgeous autumn produce on offer, this is the perfect time to get to work in the kitchen making chutneys, pickles and jams that will take you through to spring.

To save you slaving over books, we are sharing our favourite recipes that will make your mouth water and taste buds tingle.

Tomato chutney is an autumn kitchen cupboard staple and a great way to use up anything still growing on the allotment.

This recipe does take two days to complete, but is so worth it.

What you will need:
3kg tomatoes
500g red onions
1 large tablespoon of sea salt
500g juicy sultanas
500g cooking apples
500g organic brown sugar
1.14 litre spice pickling vinegar – we love Sarsons

Slice and skin the tomatoes and chop the onions as finely as you can, then place in a large bowl with the salt. Put a clean tea towel over the top and leave somewhere cool overnight.

Next day chop and core the apples and chop the sultanas too.

Mix the sugar and vinegar in a large pan, then stir as you bring to the boil and totally dissolve the sugar. Add the apples and sultanas and simmer for 15 minutes. Strain the tomatoes and onions in a colander, add to the pan and return to the boil. Then simmer the liquid for around an hour, stirring now and again until you have a lovely thick, pulpy mixture.

Once cooled, put into clean, sterilised jars and enjoy with bread and cheese.

Damson Jelly is a fantastic preserve that you can spread on buttered toast or enjoy with colds meats and Sunday lunch.

To make a decent batch of delicious jelly you will need the following ingredients and a little bit of patience, as this can be a fiddly recipe to perfect:

2kg soft, ripe damsons
The juice of two organic lemons
A bag of preserving sugar
Water

Once you have washed the fruit put it in a large pan together with 300 ml of water. Slowly bring to the boil before simmering for around an hour or until the damsons are soft.

Very carefully sieve the hot fruit and catch the resulting liquid in a large bowl. Leave to rest for around three hours.

Next measure the cooled mixture into a pan and add 500g of sugar for every 500ml of liquid. Stir this over a low heat and once the sugar has completely dissolved, raise the temperature and boil until the ‘setting point’ is reached. To find the setting point, put a little jelly onto a saucer, cool slightly then push with your finger. If the mixture wrinkles it is ready, if not, return to the heat, boil for five more minutes and test again.

Put the jelly into sterilised jars, cool before sealing and use within a year, but we think it will be eaten sooner than that!

September is the perfect time for blackberry picking and these purple beauties are perfect for making jam.

To make traditional no nonsense blackberry jam, you will need around three hours of time and the following ingredients:

2kg of just ripe blackberries – if they are a little sharp they will set better than over-ripe fruit
100 ml water
3 tablespoons of organic lemon juice
2kg caster sugar

Put the blackberries, lemon juice and water in a large pan and simmer until the fruit has broken down and is soft and lumpy. This tends to take around an hour and a half.

Once ready, add the sugar and bring to the boil whilst stirring all the time. You can then start testing for the ‘setting point’ using the same method as above. Once ready, place into sterilised jars and seal immediately. Leave in a cool, dark place for 24 hours and then you are ready to enjoy with fresh bread or scones and cream.

Whilst the weather might not be playing ball, we are still certainly making the most of the summer days and longer, lighter nights.

Wearing an extra jumper, putting an umbrella in your bag and having a weather app on your phone are all ways you can be prepared for whatever the great British weather throws at you.

Another summer winning is being sure are ready for a BBQ at the drop of the hat – even if you end up wearing it.

First, things first, get your kit right. The real essentials are an apron, oven gloves (heavy duty), good quality (not plastic) fish slice, foil and of course a pair of tongs so you reduce the chance of losing those tasty burgers in the ashes.

It is essential to place your BBQ on a flat even level and keep it away from bushes and tress to reduce fire hazards. On a health and safety note, you might want to have a bucket of water close to hand – just in case.

Get the right charcoal. It is really easy to pick up a bag of bricks at the supermarket, but if you want your food to taste great, you need to choice your fuel carefully. Lumpwood charcoal is an excellent choice. If you want to go pro and really impress your guests, chicory wood chips add amazing flavour and a professional twist.

If you want to achieve the perfect BBQ, you have to be patient. The secret is waiting for the flames to die down and for the coals to be grey and glowing. Once you have got to this point, you then need to ensure you control the temperature to ensure your food is well cooked.

What to cook is next on the list.

Keep it fresh, healthy and where you can, organic. Yes you can go to the freezer section of the supermarket and go for those tempting BOGOF offers, but they don’t really make the perfect BBQ cut.

If you have the time, go for homemade burgers. These are super-easy to make and taste phenomenal. Get some fresh, organic minced beef, mix with a little salt and pepper, shape into patties and get them on the grill. Cook them all the way through, serve in focaccia or pitta and those natural flavours will really stand out.

Chops, chicken and sausages are other BBQ favourites as are jacket potatoes! Local butchers stock an outstanding selection of organic, well-seasoned BBQ options and will be happy to talk about how best to cook them and even what wine works well! You can also look at vegetable kebabs using peppers, courgettes and beef tomatoes with corn on the cob.

Put out nibbles of course but go for healthy sides if you can. Make up a crisp, fresh green salad with olives, tomatoes and spinach. Homemade potato salad and coleslaw are always winners. Couscous and pasta are popular choices as is chunky French bread and of course, classic burger buns. Ketchup, mayo and mustard, well they go without saying, and chutney is a pretty good addition too.

We know people love a pint or glass of wine at a BBQ but also offer jugs of iced water with lemon wedges and cucumber to maintain hydration levels.

Last week we looked at getting to grips with the concept of clean eating. Today we are following on with some easy to make, delicious recipes so you can put theory into practice.

As we said, clean eating doesn’t have to be a radical departure from the way you eat today but a shift towards enjoying more the good stuff and dropping the less healthy, processed foods that can be so tempting.

Clean eating meals tend to be lower in salt, sugar and calories and because they don’t contain processed ingredients you know exactly what’s in the food you’re cooking.

So here we go with a breakfast, lunch and dinner option.

If you start the day the clean way, you’re more likely to carry on the same. This clean strawberry, avocado and mint smoothie is the perfect way to kick start your system.

You will need:

1 organic banana
2 cups fresh strawberries
3 teaspoons of fresh mint
1 avocado
2 pitted dates
1 cup of coconut water (mineral water if you prefer)
A few ice cubes

Put all the ingredients in your blender, whizz until smooth and enjoy. You can add a handful of organic oats to keep your fuller for longer and of course if you want to go green, blast some spinach or kale into the mix too.

A chunky, bean salad loaded with goodness and nutrients will not only protect your joints and heart but also stop that mid-afternoon slump a cheese and mayo packed sandwich can cause.

This is really simple but really filling and can be made the night before and taken to work.

You will need:

Small can of chickpeas, rinsed and drained
Small can of kidney beans, rinsed and drained
Salad leaves of your choice
A large handful of fresh shredded carrot
One chopped apple
½ a red pepper, sliced
¼ cucumber chopped
1 tablespoon of pumpkin and sesame seeds

Mix these ingredients together then create a dressing from half the juice of a lemon, two teaspoons olive oil, a small teaspoon of ground cumin and a pinch of salt. Drizzle the dressing over the salad and enjoy with a wholemeal pitta.

A chicken and potato tray bake is a super-easy, totally tasty dinner that the whole family can enjoy together ad it is perfect when entertaining friends.

You will need:

4 large organic chicken thighs
3 tablespoons of olive oil
500g of organic new potatoes (halved)
1 organic, unwaxed lemon
140g green olives
8 bay leaves – preferably fresh rather than dried
6 cloves of garlic
Watercress and spinach salad to serve

Set your over to 200C/180C fan/gas 6. Pour the oil into a roasting tin and add the potatoes, olives, lemon, bay leaves and garlic. Mix everything together and insure all ingredients are equally coated in the oil. Next add the chicken, skin-side up, season and put in the over for an hour. Check the potatoes are softening after one hour, then cook for another twenty minutes to ensure the meat is perfectly cooked. Serve with a salad and iced water with lemon and cucumber.

During the day enjoy healthy clean snacks, drink plenty of water and keep caffeine and alcohol to a minimum.
